Honduran Recipes

Arroz con Pollo  (Rice with Chicken)

Cook chicken in water and cut into cubes or tear into strips
Heat oil and butter in pot and add rice, onion, celery, green pepper, cilantro (optional)
Cook (fry) for 5 min- stir occasionally
Add saffron (optional), curry, chicken cubes, Worcestershire sauce, chicken,  and cut up green beans and carrots and a can of corn.
Add water (can use chicken water if you want) to more than cover the rice
Boil then reduce heat and cook until rice is done (might have to add more water if rice isn’t cooked)

Pollo horneado  (Baked chicken)

Skin chicken.
Mix tomato paste, mustard, sour cream, especias, chicken cubes, and salt.
Mix with raw chicken and add onion and green pepper slices.  Bake until chicken is done.

Boiled Chicken

Put skinned chicken in water that ½ way covers the chicken.  Add onion, green pepper, garlic, cilantro (optional), especias, and chicken cubes.  Cook chicken for 1-2 hours on stovetop.  Can add ketchup to the water when done cooking to make a salsa for the chicken.   Serve with rice.

Tacos Hondureños de Pollo

chicken tacosUse boiled chicken from above recipe- tear into strips and cook it in oil along with green pepper and onion. Place chicken on large tortilla and roll up. Fry in oil, turning once until tortilla is crisp. Ensalada (salad to put on top of tacos): cut cabbage, carrot, green pepper, onion, and cilantro. Put in colander and pour boiling water over it until vegetables are a little limp, but still crisp. Sauce...1 cup of mayonnaise 1/2 cup of ketchup, and milk as desired....to get desired consistency (watery or thick)

Honduran Enchiladas

Fry 1 lb ground beef with onion, green pepper, garlic, ½ tsp especias, salt, ½ tsp oregano, and 2 chicken cubes.  Add Worcestershire sauce, ketchup (or tomato paste and water), about 4 small potatoes (cubed).  Cook until potatoes are done (might have to add a little water).
Separately fry corn tortillas in oil until crisp.
Ensalada: Cut up cabbage and toss with salt, especias, vinegar, lemon juice, and sliced tomatoes.
Spoon meat mixture on tortillas and top with cabbage
Makes about 10-12 enchiladas

Tortitas (meatballs in tomato sauce)

Meat balls:
2lbs ground beef             1 egg
6 grated carrots               cilantro
1 med. Onion                  especias
½ green pepper
Mix together, make meat balls, and fry in oil until cooked.

Salsa:
2 cans tomato paste         5 chicken cubes
green pepper                   onion
cilantro                           sugar (to taste)
water
Boil above ingredients
Add meat balls and cook for 20 min.

Juan’s Pizza Famosa

Crust:
3c  flour                1½ sticks butter
2 eggs                   1½ Tbsp yeast
salt                        1-2 Tbsp sugar

Tomato sauce:
1 can tomato paste          2 chicken cubes
½ stick butter                  sugar
especias                         
onion and green pepper (fry 1st then add to other ingred.)

Pour flour out in a mound on countertop and make a large hole in the middle of it.  Put yeast, sugar and alittle warm water in the hole, mix and wait 3 minutes.  Put butter, salt, and eggs in the middle.  Begin to add flour  and mix well.  Make into a ball and cover for 10 min.  Flatten dough into the crust form you want.  Poke dough with a fork multiple times and let sit for ½ hour.
Pour sauce over dough and add toppings:  cooked ground beef, ham, onion, green pepper, mushrooms, cheese.

Cook in 350 oven for 15-20 min or until crust is brown.

Homemade flour tortillas

1 lb flour
Pinch salt
Pinch b. soda
2 Tbsp oil

Mix ingredients and kneed well.  Form into balls and let rest for 15 minutes. 
Spread/roll dough out in the shape of a tortilla and cook on a hot griddle (no oil needed)  Makes 15.
